MIYABI BIRCHWOOD 5000MCD represents refined Japanese knife-making at the highest level. Handcrafted in the legendary forging stronghold of Seki, Japan, this Kiritsuke features an extra-hard MC63 steel core, ice-hardened using the CRYODUR® process to ensure outstanding sharpness and long-lasting edge retention. The blade core is protected by a striking 100-layer Flower Damascus pattern, giving each knife its unique appearance. A traditional D-shaped handle made from masur birch, finished with a mosaic pin and end cap, provides excellent balance and controlled handling.

Traditionally reserved for executive chefs in Japanese kitchens, the double-beveled kiritsuke with its angled tip is ideal for precise push and pull cuts. The straight cutting edge makes it particularly well suited for chopping and dicing fruits and vegetables, while its fine edge geometry also allows for highly precise slicing.
