  • The blade is sharpened by hand using the traditional Honbazuke method to an angle of 9.5° to 12°

MIYABI BIRCHWOOD 5000MCD: Grace in a new dimension. Rooted in Japanese tradition, the Bunka shape is a lighter, thinner and shorter alternative to the classic, Western-style Chef’s Knife, blending the versatility of the classic Chef style with the precision of a Santoku. Like the Santoku, the Bunka features a wide, stocky profile, with the sharply angled tip for added precision and dexterity—making this shape extremely useful in the kitchen.

The MIYABI Birchwood collection features a potent core of SG2 micro-carbide powder steel that’s protected by 100 layers of steel. MIYABI’s innovative, CRYODUR ice-hardening process locks in the blade’s long-lasting sharpness. Beneath its beautiful exterior, the flower Damascus pattern provides exceptional durability.
